Kottu Roti -- One thing I have learned about Sri Lankan cuisine is that they are very specific about what kind of food they eat during the day vs for dinner. As the sun starts to set you will start to hear metal chopping and banging noises from some restaurant, if you do find it you are in for a treat. Kottu Roti is a Sri Lankan dish made from a type of roti bread, chopped up and stir fried with vegetables, egg and/or meat and spices. It is absolutely delicious and quite enjoyable to watch the chefs making them in the kitchen.
